Banana Bread Muffins or Loaf (V)


I have loved banana bread ever since I tasted my grandma's recipe. I was making that for years, this recipe is a healthier version of hers and I'm glad I can still enjoy it and I hope you do as well :)



Dry Ingredients:
1 cup all purpose flour
1 cup whole wheat pastry flour
1 tsp baking powder
1/2 tsp of baking soda
1 tsp salt

Wet Ingredients:
2 Tbs flax meal mixed with 6 Tbs of water
1/2 cup applesauce *
1/2 cup maple syrup or other liquid sweetener
1/2 tsp vanilla (optional)
2 medium/large bananas 
1/2 cup chopped walnuts (optional)

-In a small bowl whisk 2 Tbs of milled flax seed with 6 Tbs water, let sit 5 mins.

-Mix all the dry ingredients in a medium size bowl.

-In another large mixing bowl mash up the bananas, then mix in the rest of the wet ingredients. ( A hand mixer works great after mashing the bananas).

-Slowly add the dry to the wet and mix well.

-If adding walnuts you can either mix them into the batter or sprinkle on top of each muffin.

-Lightly grease a muffin pan, this makes about 12 muffins.

-Bake at 350 degrees, for about 35-40 mins, or until brown on top, and no longer looks wet, you could also insert a toothpick to see if it comes out clean.

-Let the muffins cool before removing from the pan.

**If you want to make this into a regular banana bread loaf just leave out the applesauce and pour into a greased or parchment lined loaf pan and bake for about 50 mins or until the top is brown and no longer wet looking.

*For 12 servings, 166 calories, 4g fat (includes walnuts).
